how to cook bison meat

Bison is has a delicious flavor of its own and is a perfect lean substitute for fattier beef dishes. Because bison is so lean it requires lower temperatures and less cooking time. To avoid overcooking follow these tips:


  • Thaw your meat completely in the refrigerator 1-2 days before cooking. If you can’t wait that long place it in a bowl of cold water. Don’t use warm water or it will start the cooking process.


  • Cook ground bison 2-3 minutes less than you would cook a beef burger. Don’t press the burgers while cooking. Browning ground bison will not require you to drain since there will rarely be any excess grease.


  • LOW AND SLOW! Roasts and briskets can be cooked at a lower temperature to keep in the moisture and keep the meat tender.


  • Steaks have little marbling- which means it is easy to overcook. Set your temperature low and cook to a medium-rare for the best flavor!
